Hand-rolled fileja pasta twisted around reed rods and tossed with spicy spreadable pork sausage (nduja), sweet red Tropea onions, and tomato sauce, or lagane e ceci (wide pasta ribbons with chickpeas, garlic, and rosemary oil, €8–€12). In southern Italy's sun-drenched climate around Diamante, kitchens rely on cold-pressed extra-virgin olive oil, durum-wheat semolina pasta, wild oregano, capers, and wood-fired bread ovens.

Grilled swordfish rolls (involtini di pesce spada), morzello (spicy tomato-and-chili tripe and meat stew served inside pitta bread rings), and crispy eggplant meatballs (polpette di melanzane, €9–€14).
